Crosne / Chinese artichoke (Stachys affinis) – P9 pot
Crosne, also known as the Chinese artichoke, is a unique and hardy perennial plant grown for its small, twisted tubers. They have a mild, nutty flavor and a crunchy texture, making them ideal for stir-frying, steaming, or using raw in salads.
The plant grows low and as ground cover and is easy to cultivate in loose, nutrient-rich soil. The tubers are harvested in the autumn, after which the plant will sprout again in the spring.

Do not allow flowering if you want to harvest tubers. Instead, prune the shoots back to 10 or 15 cm when they reach 30 cm in length. The tubers begin to form in late summer. Ensure your plants receive enough water. Harvest the tubers as needed only after the foliage has died back in late October or November.
