The kaffir lime ( Citrus hystrix ) is an exotic citrus species that is not only loved for its intensely fragrant fruits, but also for its aromatic leaves. Both the peel and the leaves are widely used in Southeast Asian cuisine, where they are called djeroek poeroet . In dishes, both the leaves and the fruits give a fresh, citrusy and slightly spicy taste. The leaves can also be dried or frozen fresh for later use.
