Harvesting and storing : Harvest spring carrots before the heat and harvest winter varieties before the first frost. You can choose the thickness of your carrots by looking at the tops. Harvest by pulling the carrots out by the roots and not by the foliage. If you have trouble getting the carrots out, use a spading fork. Nutritional value: 100 grams of raw carrot contains:
