Ingredients

  • 2 slices of smoked bacon
  • 1 tbsp olive oil
  • 2 large onions, finely chopped
  • 500 g kale
  • 10 cl cider (pale beer is also possible)
  • 1 tbsp cider vinegar (white wine vinegar will also work)
  • 300 g grated apples (granny smith)
  • 1/2 tsp salt
  • pepper

Preparation

Heat the oil in a large pot and fry the bacon until golden brown and crispy. Remove the bacon and crumble it into a separate dish, reserving the drippings in the pot. Increase the heat and stew the chopped onion for 5 minutes. Stir occasionally. Then add the chopped kale . Let it stew for another 5 minutes. Then add the cider and cider vinegar, put the lid on the pot and let it simmer for 10 minutes. Stir occasionally. Add the grated apples, salt and pepper and simmer for another 5 minutes. Sprinkle with the bacon pieces and serve with roast chicken or pork. Tasty!
