The kaffir lime (Citrus hystrix) is an exotic citrus species prized not only for its intensely fragrant fruit, but also for its aromatic leaves. Both the zest and the leaves are widely used in Southeast Asian cuisine, where they are known as djeroek poeroet. In dishes, both the leaves and the fruit provide a fresh, citrusy, and slightly spicy flavor. The leaves are also easy to dry or freeze fresh for later use.
