Horseradish (Armoracia rusticana) in P9 pot

Horseradish is a strong, hardy perennial known for its sharp-tasting root. The plant is easy to grow, vigorous, and can remain in the same spot for years. Due to its vigor, it can spread significantly, so some containment is recommended. The root is used freshly grated as a spicy seasoning, and the young leaves are also edible.

In general, horseradish requires little maintenance. As the plant grows, it will develop its characteristic spicy root, ready to be harvested when the plant is mature. Harvesting can be done from September to March. The longer you wait, the thicker the root will be. The roots are at their thickest after 18 months.

Harvesting can be done by digging up the plant partially or completely and removing the roots. Be sure to leave a piece of the rhizome in the ground after digging. A new plant will grow from this in the spring.

Uses

  • Kitchen: grated root with meat, fish, and vegetable dishes
  • Storage: process fresh for the best flavor
  • Leaves: young leaves suitable for salads or cooking

You can plant it directly outdoors in open ground. The plant is very hardy and continues to grow quietly underground in the autumn, while it dies back or slows down above ground. In the spring, it will sprout vigorously again, and you can harvest the roots starting from the second year.
