Lever Press 15 Wine
The 15 lever press uses a simple but effective lever system to easily press the load of grape marc and extract the must into the appropriate vat. It is an instrument that has become a symbol of the oenological tradition, known since ancient times and still used by producers and companies today. The 15 living press for grape marc, produced by Polsinelli Enologia, is one of the most compact models of its family. It is therefore a light and efficient instrument, made entirely in Italy and of excellent quality.

The body of the lever press consists of a cage of beech staves with removable pins, with a capacity of 5 liters of draff. The cage has a diameter of 15 cm and a height of 22 cm, and inside it, in the middle, there is a drawn steel screw with a diameter of 15 mm. The screw guides the movement of the ratchet, made of cast iron, and of the press along the inside of the cage. The latter is made up of half-moons, the actual surface that exerts the pressure, and the wooden pieces that optimally distribute the force of the ratchet.

The 15 kg grape marc press weighs a total of 8 kg. Thanks to its efficiency, ease of use and especially its compact dimensions, this instrument is highly recommended for those looking for a professional product and who want to use it immediately to press the marc after alcoholic fermentation.

HOW IT WORKS:

1. PREPARATORY WORK

Before using the press, it is advisable to dust the internal parts (those in contact with the grapes) with a brush and/or an air jet and to clean the cage, the grape wreaths and the pezzotti with a damp cloth.
2. FILLING THE PRESS

Remove all wood from the inside and make sure the cage is closed with the pins provided.
Raise the ratchet at the top of the threaded screw (turning it counterclockwise), fill the cage with the product to be pressed (as in the photo) and insert the half-moons (the two robust semi-circles of steamed beech wood) which, once joined, will coincide with the diameter of the cage itself, leaving in the middle only a gap for the central screw. The pieces of wood are placed on top, perpendicular to the direction in which the half-moons are placed (as in the photo).

3. PREPARATION FOR PRESSING

Lower the ratchet by turning it clockwise until it rests on the pieces (the top pieces should be near the mother screw as shown in the photo).

Insert the jumpers, making sure that the ends fit into the round holes in the crown (the crown is in the ratchet movement).
Insert the handle into the hole in the ratchet.

4. PRINT

Stand in front of the lever and grab it with both hands, move the lever forward and backward. This movement will move the upper part of the ratchet movement to both sides (see photo).

The action of the lever also determines the movement of the springs from the hole in which they are inserted to the hole immediately following; it determines the movement of the ratchet's rotation downwards, with the consequent pressure of the wood on the product.
When the ratchet has been lowered until it reaches the upper edges of the cage, the action should be interrupted to refill the cage with grapes.
Once the final pressing has been completed, the ratchet is brought back up (turning it counterclockwise), all the wood is removed, the cage is removed, any dregs left in the press are taken out and the press is cleaned thoroughly.
