Horseradish (Armoracia rusticana) in P9 pot
Horseradish is a strong, hardy perennial known for its pungent root. The plant is easy to grow, grows vigorously, and can remain in the same spot for years. However, due to its vigorous growth, it can spread rapidly, so some control is recommended. The freshly grated root is used as a spicy seasoning, and the young leaves are also edible.
Generally, horseradish requires little maintenance. As the plant grows, it will develop its characteristic spicy root, ready to be harvested when mature. Harvesting is possible from September to March. The longer you wait, the thicker the root will be. The roots are at their thickest after 18 months.
Harvesting can be done by completely or partially uprooting the plant and digging out the roots. After digging, be sure to leave a piece of rhizome in the ground. This will grow into a new plant in the spring.

These are hardy but not evergreen plants. In winter, the above-ground parts die back and the plant goes dormant. Therefore, when you receive the plant, it may sometimes seem like you're receiving an empty pot or a dead plant. This is completely normal: the plant is still alive and safely underground in its pot. Give it a spot in your garden, and in spring it will naturally sprout again from the underground parts.
