Real Italian flour made from 100% durum wheat

This is no ordinary flour. This is genuine Italian semolina, just as it's been made in Parma for generations. Molino Grassi grinds this durum wheat slowly and carefully into a golden semolina with character. This semolina gives your dough bite, structure, and flavor—exactly what you want for dry pasta, fresh egg pasta, ravioli, or tagliatelle. The dough is firm, supple, and forgiving of minor imperfections.

Sprinkling a little semolina on your work surface or pizza pan prevents the dough from sticking. It also gives the bottom of your pizza a nice, slightly crispy texture. Many pizza makers use semolina instead of flour for rolling out and moving the dough, especially with thin crusts.
