Yacon is a root vegetable known for its juicy, slightly sweet flavor and versatility. The tubers are rich in inulin, a natural sugar suitable for those watching their blood sugar levels. Yacon can be eaten raw or incorporated into salads, smoothies, or cooked dishes. A healthy and unique addition to any kitchen!
Cultivation
It's a beautiful plant that can grow up to 2 meters tall. Its bright yellow flowers resemble those of a sunflower, as they are related.
To ensure an optimal harvest, it's strongly recommended to plant the breeding corms indoors in late March in a pot filled with potting soil (water thoroughly!). Ideally, place one corm per pot (p. 9). Place the pot in a bright location; room temperature is sufficient. After a few weeks, the first seedling will appear. As soon as there are no more night frosts (mid-May), you can plant them outdoors. Planting distance: 50 cm x 50 cm. Harvesting takes place from late September to early November, as soon as the plant begins to decline. The longer you wait, the thicker the corms will be.
Want to save tubers for cultivation next year? Store them in a cool, dark, and airy place in a pot filled with potting soil (do not water!). The potting soil prevents the tubers from drying out.
You can also plant the tubers directly outdoors in the ground (mid-May). However, this will result in a lower yield due to the shortened growing season.
