Harvesting and storage : The fruits can be harvested as soon as they are between 15 and 25 cm in size and the skin is shiny. If the flesh is brown, the aubergine is overripe. Continue picking fruits until October and then remove the flowers to let the last fruits ripen optimally. Nutritional value: 100 grams of cooked/stewed (excl. fat) aubergine contains:
