🥬 Sowing leafy vegetables in December (under glass & indoors)

Provide sufficient light by using a grow light during the dark winter months.

Spinach is a great plant to sow in December. Use our spinach seeds and sow them in pots or containers on the windowsill. A greenhouse or unheated greenhouse is ideal for growing this leafy vegetable over winter, as it protects the seedlings from the cold. This way, you can enjoy an early harvest in spring. Spinach also thrives in cold weather and can be sown outdoors, albeit under glass.

You can also start chicory in December using chicory roots. Plant the chicory roots in a seed tray about 30 cm deep in about 10 cm of seed and cutting mix. This way, you can eat your homegrown vegetables throughout the winter.

Sprouts like garden cress and alfalfa have been cultivated and eaten for centuries for their high nutritional value. These young plants contain many essential minerals and are a concentrated source of nutrients. Carrots can be sown as early as December in an unheated greenhouse or propagator. By starting now, despite the cold winter months, you'll benefit from your seedlings growing earlier. As a result, you can harvest sooner in spring and enjoy fresh carrots from your own garden. I sow my carrots in the greenhouse along a seed bed, which I activate occasionally to keep the seeds moist.
