Elephant garlic, or giant garlic, is a crazy vegetable that you can eat in two ways. You can eat the stems like leeks, or you can eat the bulbs like garlic cloves. You can also replant (some of) the cloves. Note that this garlic is sold by the clove, not by the bulb!
- Planting : plant the cloves in early spring or late autumn
- Planting distance : 15 cm between rows and plants
- Harvesting as leeks : In spring, you can harvest some of the plants as spring leeks. This involves harvesting the entire plant.
- Harvesting garlic : Let the rest grow until summer, when the foliage begins to die back (late July-early August). Then harvest the bulbs.
- Replanting : Save some cloves to replant in the fall for the following year.
