Elephant garlic/giant garlic - Allium ampeloprasum var. ampeloprasum

Elephant garlic or giant garlic is a crazy vegetable that you can eat in 2 ways. You can eat the stalks like leek or you can eat the bulbs like garlic in cloves. You can also replant (some of) the cloves. Note that this garlic is sold per clove and not per bulb!

• Planting : Plant the cloves in early spring or late fall
• Planting distance : 15 cm between rows and plants
• Harvesting as leek : In the spring you can harvest part of the plants as spring leek. In this case you harvest the entire plant.
• When harvesting garlic : Let the rest grow until summer, when the foliage begins to die back (late July-early August). Then harvest the bulbs.
• Replanting : Save some cloves to replant in the fall for the following year.
