Chicory soup

Ingredients (4 pers)

  • 5 chicory
  • 1 onion
  • 1 small potato
  • the white stem of 1 leek
  • 1/2 apple
  • 1.5 l water

Preparation

  • Chop the onion, potato and leek .
  • Let everything simmer for about 3 minutes.
  • Chop the chicory and remove the hard part
  • Chop the 1/2 apple and add it, together with the chicory, to the other vegetables
  • Stir well and let it simmer for a while.
  • Add the water. Season with salt and pepper .
  • Bring to the boil without a lid.
  • Let it cook for 30 minutes and puree the soup with a hand blender.
