Chicory soup
Ingredients (4 pers)
- 5 chicory
- 1 onion
- 1 small potato
- the white stem of 1 leek
- 1/2 apple
- 1.5 l water
Preparation
- Chop the onion, potato and leek .
- Let everything simmer for about 3 minutes.
- Chop the chicory and remove the hard part
- Chop the 1/2 apple and add it, together with the chicory, to the other vegetables
- Stir well and let it simmer for a while.
- Add the water. Season with salt and pepper .
- Bring to the boil without a lid.
- Let it cook for 30 minutes and puree the soup with a hand blender.
