How it works:
1. Getting Started
Before using the press it is necessary to remove with a brush and/or an air jet all dust particles that are in the internal parts (and that could come into contact with the grapes) also use a damp cloth to clean: the cage, the semi-circular wooden pressing plates and the pawls.
2. Filling the press
Remove all wooden inner pieces and ensure that the cage closes using the supplied plugs.
Lift the cage along the threaded screw (turn counterclockwise), fill the cage with grape pulp (as shown in the photo) and insert the two half-circular wooden press plates (two solid half-moons of evaporated beech wood) once they are joined together, they coincide with the diameter of the cage and there is a hole in the middle for the main screw. Place the wooden blocks on top of the half-moons, they should rest perpendicular to the direction in which the half-moons are placed, as shown in the photo.
3. Preparing for pressing
Lower the jack by turning it clockwise until it rests on the wooden blocks (the upper wooden blocks should be placed near the nut screw, as shown in the photo).
Insert the metal pawls, making sure the points fit into the round holes in the crown (the crown is located in the ratchet).
Insert the handle into the hole on the ratchet.
4. Pressing
Stand in front of the ratchet and grab it with both hands, start it by moving it back and forth. This movement will cause the upper part of the ratchet to shift on both sides, (see photo).
The action exerted on the ratchet causes the metal pawls to move from the holes in which they are inserted to the holes immediately following them. This determines the downward movement of the rotation of the jack, which exerts pressure on the logs, which lie on the grape pulp.
When the jack has been lowered to the top of the cage edges, the action should be stopped to refill the cage with grapes.
After the final pressing, raise the ratchet (turn counterclockwise), remove any logs, remove the cage, pull out the dregs and clean thoroughly.
