🧺 Harvesting & storing
Celeriac can be harvested before it reaches full size. Ideally, wait until after the first frost: some of the bitter flavor will then be converted into sugar.
When harvesting, use a pitchfork to gently lift the tubers from the ground. Shake as much soil as possible from the roots and remove about 2 cm of the plant.
